USDA weight classes are minimum net weights per dozen, not per egg. Individual eggs in a carton may fall a little under the per-egg equivalent as long as the dozen makes weight; the standard sets a floor for the lightest egg at a rate per dozen (23 oz for Large, 26 for Extra Large, 29 for Jumbo).

Class = the heaviest USDA class whose minimum (Jumbo 30, Extra Large 27, Large 24, Medium 21, Small 18, Peewee 15 oz per dozen) the dozen weight meets. Single eggs are scaled × 12; 1 oz = 28.35 g. Weight class is separate from quality grade (AA, A, B), which this tool does not assess.

About the egg size grade calculator

Large, Extra Large, and Jumbo are not descriptions, they are USDA weight classes with exact minimums. This calculator takes an egg weight in grams or ounces, the net weight of a full dozen, or a list of up to 12 individual eggs, and returns the size class, the weight in both units, the per-egg equivalent of the class minimum, how far the eggs are from the next size up, and, for a list, how many eggs fall in each class.

It is for small egg sellers who want to label cartons correctly, keepers who wonder what their hens are laying, and bakers whose recipes assume a Large egg.

USDA weight classes are per dozen

The USDA Agricultural Marketing Service standards (AMS 56, section 56.218) define consumer weight classes by minimum net weight per dozen: Jumbo 30 oz, Extra Large 27 oz, Large 24 oz, Medium 21 oz, Small 18 oz, Peewee 15 oz. Dividing by 12 gives the per-egg equivalent that most charts quote, for example 2 oz (56.7 g) for Large, but the class is legally about the dozen. The same table sets a floor for the lightest egg in a carton at a rate per dozen (23 oz for Large, 26 for Extra Large, 29 for Jumbo), so a Large carton may hold a few eggs just under 2 oz as long as the dozen makes 24 oz.

How the calculator decides

A single egg is multiplied by 12 and compared with the dozen minimums; the class shown is the heaviest one the egg meets at that rate. A dozen is compared directly. A list of eggs is averaged, the average is multiplied by 12 for the dozen class, and each egg is also classed on its own so you can see the spread. Ounces convert to grams at 28.35 g per ounce.

Weight class is separate from quality grade. AA, A, and B describe the interior and shell, judged by candling, and this tool does not assess them.

Worked example: a 60 g egg

A 60 g egg weighs 2.12 oz. At the rate per dozen that is 25.4 oz (720 g), which meets the 24 oz Large minimum but not the 27 oz Extra Large minimum, so it is Large. The Large minimum per egg is 2.00 oz, or 56.7 g. To reach Extra Large the dozen would need 1.6 oz more, about 0.13 oz per egg. A full dozen weighing 25.5 oz is also Large. A list of 52, 55, 57, 58, 60, 61, 62, 63, 64, 65, 66, and 70 g averages 61.1 g (2.15 oz), 25.9 oz per dozen, Large, with 4 Extra Large, 6 Large, and 2 Medium eggs.

Frequently asked questions

How much does a large egg weigh?

A USDA Large dozen weighs at least 24 oz, which is 2 oz (about 56.7 g) per egg. In practice Large eggs run from about 57 to 63 g each, since anything at 64 g or more (2.25 oz) reaches the Extra Large rate.

What are the USDA egg sizes in grams?

Per egg at the dozen rate: Peewee at least 35.4 g, Small 42.5 g, Medium 49.6 g, Large 56.7 g, Extra Large 63.8 g, and Jumbo 70.9 g. The legal definition is per dozen: 15, 18, 21, 24, 27, and 30 oz.

Can a carton of Large eggs contain eggs under 2 oz?

Yes, within limits. The dozen must weigh at least 24 oz, and the USDA standard sets the floor for individual eggs at a rate of 23 oz per dozen (about 1.92 oz each) for Large. Sorting by the dozen weight is what the standard actually requires.

Does egg size affect the grade?

No. Grade (AA, A, B) is about interior and shell quality found by candling; size is about weight. A carton is labeled with both, for example Grade A Large, and this calculator only handles the size half.
